I Love Me Mug Cake

Ingredients

  • 1 Tbsp coconut oil (melted)

  • 1 Tbsp coconut milk

  • ½ tsp apple cider vinegar 

  • 1 egg (whisked well)

  • 1½ Tbsp honey + a little more for topping 

  • ¼ tsp vanilla extract

  • 1 Tbsp vegan vanilla protein

  • 2 Tbsp gluten free flour

  • ½ tsp baking powder

  • 1 Tbsp sultanas 

  • ½ ripe banana

  • ¼ tsp pink salt



Method

  1. Place 1 Tbsp of coconut oil in a small mug and melt in the microwave

  2. Remove the mug from the microwave and swirl the coconut oil around so that it greases the bottom edges of the mug

  3. Using a fork, whisk in coconut milk, apple cider vinegar, egg, mashed banana and honey until well combined

  4. Add in remaining ingredients (except sultanas) and continue to whisk with the fork until there are no lumps of flour. Gently scatter sultanas into the mug

  5. Place in the microwave for 90 seconds (900-1000W)

  6. Drizzle a little honey on top and enjoy warm, straight from the microwave!
