Vanilla Bread Pudding

Ingredients

6 Gluten Freedom Simply Soft Sourdough Bun

⅓ cup sultanas

⅓ cup flaked almonds

2 large eggs

1 tsp vanilla bean paste

1 tsp cinnamon

2 Tbsp organic maple syrup

⅓ cup coconut sugar

¾ cups canned coconut cream

¼ cup nut milk (we used coconut)

2 Tbsp melted vegan butter (+ extra for greasing, 1.5  in wet mixture + rest for glazing top)

Method

  1. Preheat oven to 180ºC and grease a medium-large dish with vegan butter

  2. Cut gluten free bread into 2-3cm cubes and place in a large bowl with sultanas and flaked almonds

  3. In a separate medium-sized bowl, whisk together eggs, vanilla, cinnamon, maple syrup, coconut sugar, coconut cream, nut milk, and 1½ Tbsp of melted vegan butter

  4. Gently fold the wet mixture into the bread, ensuring all cubes of bread are thoroughly coated and absorbing the liquid

  5. Transfer mixture into your prepared dish, using a pastry brush and the remaining melted vegan butter, brush over the top layer of bread before baking in the oven uncovered for 30 minutes

  6. Remove from the oven and serve hot with vegan vanilla ice cream!
