Simple 7 Protein Balls

Sweet treats ∙ 14 balls

Dairy Free ∙ vegan ∙ vegetarian

Ingredients

  • 15 fresh medjool dates (pitted)

  • 1 cup gluten free oats

  • ¼ cup cashew butter

  • ¼ cup almond milk

  • ½ cup vegan choc protein powder

  • 2 Tbsp cacao nibs

  • pink salt

Method

  1. Place medjool dates and oats into a food processor and pulse 5-6 times or until dates have broken up into tiny chunks

  2. Add remaining ingredients to the food processor and pulse until evenly combined

  3. Test the consistency by squeezing the mixture using your hands. It should hold together firmly while being only slightly sticky. If it crumbles away, the mixture is too dry (add a little more almond milk or cashew butter). If the mixture sticks to your hands too much, the mixture is too wet (pulse some more oats into the mixture)

  4. Use your palms to roll the mixture into 14 compact protein balls

  5. Store in the fridge in an airtight container and enjoy as a healthy, protein-filled snack!
