Sea Salt Lamington Bites

Ingredients
8 fresh medjool dates (pitted)
1 cup shredded coconut
½ cup blanched almond meal
¼ cup cacao powder
2 Tbsp hemp seeds
¼ tsp sea salt
Method
Pit dates and soak them in warm/hot water for 10 minutes
Drain water from the dates and place in a food processor. Blitz until smooth then add all remaining ingredients
Blitz until evenly combined and smooth (a little chunky is fine) if using your pulse setting, pulse 7-10 times
Line a square tin with baking paper then transfer the mixture on top
Use the back of a rubber spatula to spread the mixture out evenly and flatten out the surface
Set in the fridge for 3-4 hours before slicing into 25 mini bite-sized portions! Store in the refrigerator in an airtight container
