Oregano Chicken Schnity

Ingredients

  • 1 cup blanched almond meal

  • 2 Tbsp dried oregano

  • 2 eggs

  • 1 Tbsp almond milk (unsweetend)

  • 1 clove garlic (minced)

  • 2 large chicken breasts (cut twice length ways into 3 thin fillets) 

  • 2 tsp sweet paprika

  • 1 Tbsp olive oil

  • salt & pepper

Method

  1. Combine almond meal, paprika, oregano and a few cracks of pink salt on a large plate

  2. Lightly beat eggs in a bowl then add crushed garlic, almond milk and a few cracks of pepper

  3. Dip chicken fillets (you should have 6 thin fillets) into egg mixture

  4. Use a separate hand to transfer the dipped fillet to the plate and press almond mixture into both sides until evenly coated

  5. Add olive oil to a large non-stick pan and cook chicken over a medium heat for around 3-4 minutes each side or until crumbing is a light golden colour
