You’re So Sweet Choc Lava Cake

Ingredients

100g block of dark dairy free chocolate

1/2 cup vegan butter

1/2 cup gluten free plain flour

3/4 cup coconut sugar 

3 eggs, at room temperature 

1/2 tsp vanilla extract

Method

  1. Preheat your oven to 200Β°C

  2. Take 4 medium ramekins and lightly grease the bottom and sides with a little bit of vegan butter.

  3. Using the double boiler method, heat the butter and chocolate on low heat until fully incorporated. Alternatively, you can also heat the butter and chocolate in the microwave for 4x20 second intervals. Be sure to stir in between each 20 second increment to make sure that the chocolate and butter combine well!

  4. Using a wooden spatula, stir in the coconut sugar and vanilla into the chocolate mixture

  5. Add one egg in at a time, ensuring to combine well after each addition

  6. Mix in the gluten-free flour until the batter is smooth (ensure that there are no pockets of flour in the batter)

  7. Divide the mixture evenly between the four ramekins

  8. Place into the centre of the oven, and cook for 9-11 minutes

  9. Remove from the oven when the edges are firm and the centre is soft when lightly touched

  10. Turn each lava cake out onto a serving plate and serve with vegan ice cream!
